How to Make Cannabis-Infused Churro Cookies

Ingredients:
- 1½ cups flour.
- 1½ tsp cinnamon.
- ¼ tsp baking soda.
- ¼ tsp salt.
- 1 cup brown sugar (packed).
- ½ cup cannabutter.
- 1 large egg.
- 1 tsp vanilla extract.
- ½ cup white sugar.
- 2 tbsp cinnamon.
Tools:
- Heavy-bottomed saucepan.
- Candy thermometer.
- Wooden spoon (or silicone).
- Baking sheet lined with parchment paper.
- Heatproof bowl for dipping.
Instructions:
1. Dry stuff: Grab a bowl, toss in flour, cinnamon, baking soda, pinch of salt. Whisk it good, set it aside.
2. Butter time: Big bowl, drop in that cannabutter, zap it in the microwave until it’s soft, not soup. Dump in the brown sugar.
3. Mix it up: Whack the sugar and butter with a mixer, low speed, couple minutes, get it creamy. Crack in an egg, splash of vanilla, mix until it’s just blended.
4. Wet meets dry: Little by little, throw the dry stuff into the wet mix. Mixer on medium, two minutes, you want a soft dough that sticks together.
5. Chill out: Cover that dough, stick it in the fridge, 15-30 minutes. Firms it up, makes it easier to work with, keeps the cookies from spreading out like crazy.
6. Roll & coat: Grab bits of dough, roll into balls, about an inch. Then, roll them in a sugar-cinnamon mix, like you’re making mini churros.
7. Get ready to bake: Line a baking sheet, drop those coated balls an inch apart.
8. Baking magic: 350°F, ten minutes, watch ’em ’til the edges go light brown. Don’t overdo it, or they’ll be hard as rocks.
9. Cool down: Let them chill on the baking sheet for five minutes, then move them to a rack to cool off. Then, chow down.

Tips For Better Cannabis Churro Cookies
Baking with cannabis is an art and a science! Here are some pro tips to help you get consistently delicious results every time:
- Even Cannabutter Distribution: Make sure your cannabutter is fully softened and evenly mixed into the dough to avoid inconsistent potency across cookies.
- Accurate Dosing: Always double-check your THC calculations with the Dosage Calculator to ensure a predictable experience.
- Chill the Dough: For thicker, chewier cookies, chill the dough for 30 minutes before baking.
- Uniform Size: Use a cookie scoop for consistent portion sizes, this helps with even baking and dosing.
- Don’t Overbake: Pull the cookies out when the edges are just turning golden. They’ll continue cooking slightly on the baking sheet.
- Fresh Cannabutter: Use freshly-made cannabutter for the best flavor and potency. Older infusions can degrade over time.
