How to Make Cannabis Matcha Cocoa Rice Bites

Ingredients:
- 20g rice puffs or crushed rice cakes.
- 50g vegan dark chocolate.
- ½ tbsp cannabis coconut oil.
- Pinch of pink salt.
- 60g Greek yogurt (or thick vegan yogurt).
- 60g organic raw peanut butter.
- Cinnamon (optional).
- 20g rice puffs or crushed rice cakes.
- 50g vegan white chocolate.
- ½ tbsp cannabis coconut oil.
- 1½ tsp matcha powder (sifted).
Tools:
- Sifter.
- Spatula.
- Microwave-safe bowls.
- Whisk or spoon for stirring.
- Silicone or lined muffin tray.
Instructions:
1. Make the matcha layer: In a small microwave-safe bowl, melt the white chocolate with ½ tbsp cannabis coconut oil (use 20-second intervals or a double boiler). Sift in the matcha powder and mix well using a whisk or spoon. Add 20g rice puffs and stir until fully coated. Set aside.
2. Prepare the chocolate base: In another microwave-safe bowl, melt the dark chocolate with the remaining ½ tbsp cannabis coconut oil. Stir in the remaining rice puffs and a pinch of pink salt. Mix until coated and set aside.
3. Whip the creamy middle layer: In a separate bowl, combine the Greek yogurt, peanut butter, and a dash of cinnamon (if using). Stir until smooth and creamy.
4. Assemble the bites: Grab your silicone or lined muffin tray and start layering: Spoon the dark chocolate-covered rice puffs into the bottom of each cup to form the base layer, next add a dollop of the yogurt-peanut butter mixture for the creamy middle and finish with the matcha-white chocolate rice puffs as the top layer!
5. Chill and enjoy: Pop the tray into the refrigerator for at least 1 hour or until firm. Once set, remove the bites from the tray, serve, and enjoy!
