Ingredients:

  • ¼ tsp salt.
  • 3 packages unflavored gelatin.
  • 1 cup cold water, divided.
  • 1½ cups granulated sugar.
  • 1 cup light corn syrup.
  • 2 tsp vanilla extract.
  • 2 tbsp cannabis-infused oil.
  • ½ cup powdered sugar.
  • ½ cup cornstarch.

Tools:

  • Stand mixer or hand mixer.
  • Saucepan.
  • Candy thermometer.
  • Baking pan.
  • Rubber spatula.
  • Measuring cups & spoons.
  • Fine mesh sieve.
  • Sharp knife.
  • Parchment paper (optional).

Instructions:

1. Prepare the pan: Lightly grease a baking pan. In a small bowl, mix the powdered sugar and cornstarch. Sprinkle a generous layer over the bottom and sides of the pan to prevent sticking.

2. Bloom the gelatin: Pour ½ cup of cold water into the bowl of your stand mixer. Sprinkle the gelatin evenly over the water and let it sit for about 10 minutes while you prepare the syrup.

3. Make the sugar syrup: In a saucepan, combine the remaining ½ cup water, sugar, corn syrup, and salt. Cook over medium heat, stirring until the sugar dissolves. Once dissolved, stop stirring and allow the mixture to cook until it reaches 240°F (116°C) on a candy thermometer.

4. Whip everything together: With the mixer on low, slowly pour the hot syrup into the bloomed gelatin, then whip on high for 10–12 minutes until thick and glossy; add the vanilla and cannabis-infused oil during the last minute and mix until fully incorporated.

5. Spread the marshmallow: Immediately pour the marshmallow mixture into your prepared pan. Use a lightly greased spatula to smooth the top. Dust the surface generously with more of the powdered sugar and cornstarch mixture.

6. Let them set: Allow the marshmallows to sit uncovered at room temperature for at least 6 hours, or preferably overnight.

7. Cut and coat: Allow the granola bars to cool in the pan for about 30 minutes before transferring them to a cooling rack. Once completely cooled, refrigerate them for another 30 minutes for cleaner slices.

8. Slice and enjoy: Turn the marshmallow slab onto a cutting board, cut into squares with a sugar-dusted knife, then coat each piece on all sides with the remaining powdered sugar mixture to prevent sticking.

  • Grease Everything: THC Marshmallows are incredibly sticky. Lightly greasing your spatula, knife, and even your hands makes the process much easier.

  • Storage: Store the marshmallows in an airtight container at room temperature for up to two weeks. Avoid refrigerating them, as moisture can make them sticky.
